    【DIY.糖醋茄盒】


    拿了冰箱剩下的茄子就開始動手做做囉,發現這真是一道很「搞剛」的菜,沾粉和襄肉就花了很多時間@@,因為整個小細仔也龜毛到不行,老媽在一旁看的心急,想插手又一直被我制止,欲速則不達嘛,不過我的速度確實也太悠閒了,如果急來急去最後又有遺憾什麼步驟應該要做好,不就前功盡棄了。完成結果和我預期的差不多,家人都覺得好吃,茄子因為切的較薄,炸起來再回鍋上醬汁後還是有一次的硬度,不會軟趴趴的太嚴重,餡肉也好在沒有調的太鹹,因為外頭的糖醋醬已經很夠味了,配上去剛剛好,但唯一缺憾就是糖醋醬調的稍甜了點,家裡人都吃偏酸、辣、鹹,甜則是少量可接受,不過好險大家都很棒場,算是甜的範圍還可以接受啦








    ● 需要食材:
    材料:茄子、豬絞肉、蒜未、麵粉
    調料:醬油、酒、蒜末、薑末、胡椒粉、五香粉、鹽
    糖醋調料:
    糖、醋、蕃茄醬、水
    比例為:1:2:2:3 (依個人口味)
    ● 作法:
    1.將豬絞肉與調料拌勻(要摔也OK)
    2.將茄子切成一公分厚度,再由中間的地方切一刀(不要切斷),過鹽水撈起瀝乾,裡外沾上麵粉,並將餘粉抖掉
    3.醃好的豬絞肉塞進茄子中,沾上蛋液或直接再上一層麵粉都可以
    4.下油鍋去煎或炸至全熟後備用
    5.將起一個另一個鍋,將大蒜爆香,後加入調好的糖醋醬,滾後放入炸好的茄盒子,以大火翻動讓醬汁均勻上色,汁差不多收乾了就可起鍋
